Delicious Kale Sandwiches

First, prepare some kale for your sandwich while you gather the other items together:

Quick Lovely Kale

A large bunch of kale, washed with the tough center stems removed*.

1 tablespoon Olive oil

1-2 cloves of garlic, minced

2 to 4 tablespoons vegetable stock or water

2 tablespoons fresh lemon juice or red wine vinegar (optional)

Salt & pepper, to taste

Heat a couple of tablespoons of olive oil in a large saucepan over medium-high heat. Add the garlic and cook for a couple of minutes to lightly cook but not brown (Garlic can turn bitter if it is cooked too long in this way). Add a few tablespoons of vegetable stock or water to the pan, then and the kale and toss to combine. Cover and steam cook for 5 minutes. Toss a couple of times during the 5 minutes. Remove cover and continue to cook, stirring until all the liquid has evaporated. Season with salt and pepper to taste and add fresh lemon juice or red wine vinegar, if desired.

At Our Farm, we prefer fresh lemon juice on our Kale. We use this preparation of kale then add to a sandwich instead of lettuce.

Delicious Kale Sandwiches

Get a couple of slices of good bread (toasted is preferred). Spread some of your favorite hummus on your toast- as thick or as thin as you like it. Add some chopped green onion &/or cilantro, and a lovely thick slice of tomato. And then pile on a good handful of kale prepared with as above with the fresh lemon juice. Close up the sandwich with the top slice of toast and Enjoy!

* A fast way to remove stems from kale: Hold the base of the stem in one hand and with your other hand placed at the base of the leaf around the stem. Now separate your hands quickly vertically. The tough stem will pull away from the rest of the leaf. Stems can be used in making vegetable stock or simply composted.
