Roasted Carrots

1 - 1.5 lb. carrots

2 Tbsp. cooking fat (coconut oil, olive oil, butter)

1/2 tsp. salt

1/4 tsp. garlic powder

1/4 tsp. onion powder

1 tsp. dried parsley

Preheat oven to 375.  Mix all ingredients together and spread them out on a cast iron skillet or baking sheet.  Bake for 40-50 minutes.  Enjoy!
